Recipe: www.healthyveganrecipes.net This vegetarian stuffing recipe is the perfect alternative to a traditional bread-based stuffing, and is made with healthy brown rice. It is still full of flavor though, thanks to some apple cider, cranberries and thyme. A few vegan Christmas recipes like this one add up to a wonderful holiday meal, leaving you satisfied and nourished without falling asleep with an overstuffed belly.

@37mamak I do take supplements, and they are really important on a vegan diet! B12 is essential, and I would get it in a B complex since the B vitamins compete with each other, so getting too much of one means you might not get another. If you look back in my blogs, I wrote a long section about supplements and B12. I’ll also be setting up a resources section on the new site (healthy eating starts here dot com) with specific recommendations for good supplements – so stay tuned! 🙂

Have to have the cranberries with the apple. it makes it so much better! I use veg broth, too, for your measure I’d do 1c apple cider, 1.5c veg broth, 1.5c water. Just makes it a little richer 🙂

This looks tasty-think I’ll stuff a couple of sweet potatoes that have some of the flesh left in and bake til warmed through, then slice crosswise for plating.
