Recipe: www.healthyveganrecipes.net I haven’t seen many healthy vegan Christmas recipes for gingerbread, but since it is one of my favorite Christmas (or any time) treats I have gone through a lot of experimentation to come up with the best vegan gingerbread recipe. It’s a bit trickier than some other recipes, but creates the perfect texture for cutouts or houses. If you’re feeling really daring, you can make gingerbread ornaments for your tree.

@Livna2707 Lucky you! Phil & his dad love my gingerbread, so I have to keep making it… luckily I have fun making it, when I get the time.

@monodentate Thanks for watching – the 1/4 cup of oil in the recipe is much lower than most other cookie recipes, and actually I usually only use a couple of tablespoons and they turn out just as nicely. Some saturated fat in your diet is necessary for certain functions in your body so don’t be afraid of it as long as you don’t overdo it. The type of saturated fat in coconut oil is different than the type of saturated fat in animal products. Hope you enjoy the cookies!! 🙂

@iDiggMGL haha… perfect! So glad I could help, and with good timing. I hope your family enjoys them as much as mine does – Phil’s dad is addicted I think 😉

@MrsBrettBretterson You can use olive oil if you like – the molasses & spices will totally mask the flavor of olive oil

@sewmommysew Thanks, I just finished eating one, so good… Now, for whole spelt berries you will need a proper grain mill. I have tried grinding whole grains in a coffee grinder (burnt out the motor) and a blender (didn’t get down to flour consistency)… just doesn’t work. A flour mill will work, but if you don’t have one they’re kind of pricey. If anyone else has tips, please post – otherwise I think you’ll have to get some flour instead… But any whole grain flour will work wonderfully 🙂

Great recipe but are they really low fat since coconut oil has saturated fat in it?

Yay! I’ve been craving gingerbread cookies! I think I’ll make a gingerbread house tomorrow. Do you know of any substitutes for the coconut oil?
