Recipe: www.healthyveganrecipes.net This sweet potato biscuits recipe was given to me by a friend a few years ago. It wasn’t vegan, but was easily adapted. These biscuits are perfect as part of a holiday meal, and incorporate sweet potatoes in a different way than usual. Vegan Christmas recipes for sweet potatoes are often my favorites since I love the flavor, and I am eternally grateful to the friend who gave me her amazing recipe.

oooo… this seems so easy and looks like it going to be so good.
Can you use the same equivalent of spelts (sp) for all recipes?
1 small sweet potato
1.5 Tbsp melted coconut oil (1)
(mix)
1 Tbsp maple syrup
(mix)
2 tsp baking powder
(mix really well)
pinch salt
1 cup whole grain flour (or spelt)
(mix)
(separate into biscuits on a coconut oiled OR parchment paper lied cookie sheet)
1.5 Tbsp melted coconut oil (2)
(Brush raw Biscuits with remainder of coconut oil)
Bake at 375F for 10 minutes

My family loved them! I made them for New Years Eve. I doubled the recipe so if ur going to try my variations u’ll have to halve them: I used rice bran oil instead of the coconut oil because coconut oil is xpensive, I added 1/4 cup brown sugar (I used the CSR brand because their sugar is vegan, some sugars are ground on animal bone to make them white), added a heaped teaspoon of cinnamon and a dash of nutmeg. @Elizabeth01010101 Ah, yes, sweet potato fried are definitely peeled before cooking – their crispy outer edge is because of the deep fry 🙂 The bitter flavor is your body’s defense against toxins – although sometimes the plant can create a false bitter to deter animals/humans from eating it

@healthyvegan Ohhh ok. I have only eaten sweet potato fries in my experience (which are delicious) but I don’t think they had the peels. I didn’t know that they have a bitter taste. What do you mean by the bitterness can cue you to the presence of toxins? Just curious.

@Elizabeth01010101 These peels I put into the compost, which goes into the vegetable garden to come back around. Peels in general do have a lot of nutrients, but I tend not to eat sweet potato peels. Just personal preference I guess… They have some bitterness to them, which can sometimes cue you to the presence of toxins, but if you want to use them you could blend them into the biscuits. I usually use all the softer peels (carrots, potatoes etc). Hope you enjoy! 🙂

@bonjourbeaute Olive oil would work just fine, and you can sub the maple syrup for brown rice syrup, sugar (just add a bit of water to make up the liquid), or honey. Hope you enjoy! 🙂
